I came across this video on Youtube today of how they make the Gianni Acunto ovens. On my recent pizza pilgrimage to Naples - I noted that this was the oven that just about every pizzeria worth it's salt had in their entry

Pretty cool video to watch, very different approach than what the builds have evolved to here.
