I recently purchased a wood fired oven after years of using traditional deck ovens. One of the main reasons I bought said oven was to increase production capacity. How do you all produce the most pizzas per hour? I would love to be able to prepare the pizzas in advance and then cook them rapidly. I want tips on how to get the most out of my oven at the highest volume. I have ideas but I want to hear it from other professionals as to how they achieve top numbers.
What equipment, techniques, and tools do you use? I am extremely open and flexible in my approach.
