    Hi!
    I just purchased a dried sourdough starter and activated it. The water seems to separate from the starter. Is this o.k.? It has a smell of beer and bubbles are forming in the starter.

    Yes, stir it back in and keep feeding it...

      That sounds right. At some point, that liquid becomes too high in alcohol for the yeast to keep working, so you need to feed it and stir it to get it back to equilibrium.

          I haven't done pizza for a while -- I need to do that!

          I did make a pan loaf of straight white bread with starter and no yeast. It was OK, but I need to keep working on it.
