  • Veraci Pizza

Another stop we made in Seattle, last month, was Veraci Pizza. I saw it mentioned on various websites. It's a traveling wood fired oven. Since James was making noise about this type of endeavor, I had to investigate for the good of the order.
Right off, I loved it due to it's simplicity. Prep in the back, a make table on one side and the finished pizzas are on the other. As you can see the oven is front and center. I was amazed at how well the oven performed. The handmade adobe oven was built by Marshall, the owner. A very nice guy who took some time to chat although he was swamped with customers. He said the whole shebang is homemade. He has two others.
He advertises authentic Neapolitan pizza. I spotted a 50# bag of all-purpose flour in the prep area. The folks constructing the pizzas were using a rolling pin.
We bought a few slices. My opinion was that it tasted like excellent Chef Boy-R-Dee homemade pizza. Still in all, People were lining up. I even bought a T-shirt.

    James!
Hear Ye! Hear Ye! Today, I am a peasant!
On Sunday, I will fire up the BFO and send half of the heat your way.
    I love this place.
