  • Fireside Pies, Grapevine

My wife and I had our first visit to Fireside Pies, the newest of a 3-store mini chain in the Dallas area. They have two ovens that appear to be wood/gas hybrids.

We tried two pizzas... the toppings on each ended up being a bit overwhelming, we should have gotten a margherita for basic comparisons.

The "hot and crumbly" had hot italian sausage, tomatoes, and peppers... but the sausage was noticeably greasy, which was a minus.

The second pizza was chicken, oven roasted mushrooms, and spinach. The spinach was piled on top like a salad, so again, a bit ridiculous. The toppings tasted good, but there was nothing subtle about the "pie."

The crusts on each pizza had a nice appearance and flavor... the right amount of charring, a few puffy spots on the corncione. The "oven roasted" tomato sauce was underwhelming.

All in all... a decent attempt at gourmet pizza, and we're always happy to see wood-burning ovens, but we'd have to give Fireside a grade of "B."
