    Our local wood-fired oven is call Manzanita. It's a modern Italian/wine country restaurant that cooks pizzas mostly as appetizers. They also finish a number of their dishes, roast chicken, fish, etc., in a cast iron pan in the brick oven. The oven itself is set real high in the back of the restaurant, where you can easily see the chef work.

    A number of folks have driven to Healdsburg to pick up an oven and spend the weekend in the wine country, and they eat at Manzanita. You can introduce yourself to the chef.

    It's on Healdsburg Ave., just off the plaza. (707) 433-8111.

    Manzanita is OK at best. Close to Healdsburg is Diavola in Geyserville, but the best pizza in the area is Rosso in Santa Rosa and Petaluma. The chef there sells me his dough and it's better than any I make, and mine's not bad.
