Did the smoking on Saturday and had pulled beef sandwiches that night for dinner. Last night she who runs the house took the left overs and made a BBQ beef pizza out of it. Both the sandwich and the pizza turned out very well. I was in a hurry (last second dinner idea Saturday) so I cooked the chuck in a pan the whole time. When it hit about 165 IT I added onion to the pan and covered it to get to temp. Once it was reading 208-210 IT I took it off the grill and let it rest as long as she would let me. Only thing we thought we would change in either was thinning out the BBQ sauce (Sweet Baby Rays Original) on the pizza. Otherwise both were very good.
