I too enjoy the convenience of a bread machine for making the dough...After 90 minutes, out comes the dough which goes into the proof box. I find it best to leave the box in the ref overnight, then take it out 2 hrs before use.

This is convenient for small mixes but try a 5Kg flour mix through one or multiple breadmakers.
I will continue to use my 10Kg commercial and now a 20Kg Hobart mixer for even small 2.5Kg mixes which are the smallest that I make. Domestic mixers won't handle even these mix quantities. It is hardly worth firing the oven for less.

we usually run 2 bread machines at a time, just pull dough out after kneading and repeat.

I didnt think making dough was that much trouble? mix it and leave it to do its own thing in the mixer bowl.Last edited by brickie in oz; 01-07-2012, 01:20 AM.

The best thing I've done besides building my oven, was purchasing a bread machine to make my doe. All I have to do is add my measured ingredients and push a button. After a couple of hours I have doe ready to go. No fuss, no mess.
