I recently purchased the Mecnosud PK25AM which is a 25kg (kneading capacity) single speed spiral dough mixer. I was successfully making 1kg (flour) batches of dough with a domestic multi-speed mixer but have been unable to transfer this success to the larger single speed mixer. I am using the same recipe and process. The only difference besides the batch size is that I am unable to mix at a higher speed on the single speed mixer for a duration. Is there a trick to producing quality dough with the 25kg single speed mixer? Any feedback is much appreciated.
