On to oven door contruction
rough thoughts for the moment is 10mm compressed cement face with 50mm x 50mm hardwood insulation....

My first oven door was jut a temporary door of uninsulated 20mm ply that didn't last long and ended up in a pile of ashes.

My Mk II "temporary" door is a bit of 6mm ply (the old arch form work) that is glued and screwed to a couple of 50mm thick aerated concrete blocks and has a thermometer through it. The plywood does not touch any brick so is not showing any signs of charring

It has lasted for 6 months without fail so far and one day I'll get around to making a permanent door that is better looking.

your door is a Great idea as low on time and funds at the moment so I brought some hebel ($6) and from what I had lying around knocked up a passable door. Cut in the hebel to fit the revel and got a tidy fit . Lit a small fire as the oven has had a good soaking due to the rain to find out how it worked. When I blocked the oven late Fri night when thr fire was dead I fitted the old meat thermometer through the hebel showed 200F next morning 175F and 3pm sat still at 125 F. Great to know the oven holds its heat but the ovens soaked it real steamy when you open the door. Hope this rain stops so i can dry this oven out and seal the render. by the way were did you get the thermometer from? The child brides real crook on my using the meat one and wants it back. And the Degree in F and the low temp rating only going to 200F I could use a proper one.
