    Re: Pizza Equipment and Accessories

    Have you tried

    Field Furnace Refractories

They have kits for peels, cleaners etc.

Thermometers do you want a point and shoot variety or a hard wired version? Point and shoot I got a Fluke brand one on ebay for around $150 does to 500 deg C.
Hard wired means a bit more work. I was going down this path but decided against it (and I'm an electrician), and got a point and shoot as I can use it elsewhere.

Never thought to check out field furnace. Thought they were only into building materials.

I got a 100cm oven on order so just browsing the internet and around Sydney to see what's good and available and I guess a good price.

I bought an Infrared Thermometer -30C to +550 C for less than $30 and it has worked fine for the last (almost) 2 years.

The tools I made myself from aluminium sheet and they too work fine. I picked up offcuts of new material from the scrap metal dealer and it is as cheap as chips $15/kg. I made the set but the ones that get the use are curved blade for moving coals/fire around, the turning peel and the brush. The brush I made from a brickies natural fibre brush by attaching a dowel handle.

There is a thread about tools both purchased and home manufactured on here. It is called Tools in Australia. It is a goldmine of information.

The brush is the topic of much conversation and the consensus is that metal brushes are best left out because of bristles falling out and lodging in food with nasty results.

Like many others I made most of the tools for my oven. To buy them can be very expensive. Any tools I have that are not home made have been gifts.

The most recent gift was this beautiful hand-made pizza wheel my wife bought for me last week from a wood craft stall at Salamanca markets in Hobart. The handle is Tasmanian Myrtle:

          Sharkey.

I love cooking with wine. Sometimes I even put it in the food.

I got my thermo gun off ebay $160 goes to 1200c great for seeing how hot the bloody fire gets in the middle makes a great study.....

I have been gifted a couple of tools from Slow Hand forged Tools they post to you. Extreme quality great to use.

I always go the extreme as you I am never happy with restrictions you never know when you may need it.

Ebay is a great resource but finding Aliexpress even better in most cases. Get a credit card with minimal credit limit say $ 00 use this online then the most damage is just the 500
              Cheers Colin

$160!!! Wow! I paid $30 for mine (German chip, you know). The only thing that's broken in two years is the battery spring and I just use one of my daughter's acrylic fingernails, and it wedges in there just fine!
