Az people. There is a chefs store in tempe. They sell 55 pound bags of pivetti oo pizza flour. From what i have read its every bit as good as caputo.

Thanks for the tip. Just finished the stand for the hearth and the Casa 2G100 is in the garage. I'm in Green Valley just south of Tucson. I was wondering if there is a rule of thumb for the size of the landing in front of the oven? Thanks, Merry Christmas
