  • The Best Cookbooks for Wood Fire Ovens??

Hi all you wood fire expert chefs

I am interested in buying a cookbook (or two... or three.... ok ok I like my cookbooks!) to help me master my new woodfire oven

I want to get insight into cooking a range of dishes including breed, pizza, roasts etc etc and would love a few great recipes

    Any suggestions or reviews?

    Alice

btw - I meant 'bread' - don't need any tips on the 'breed'ing front! ha!

For the "breed", there is a book called "Artisan bread in five minutes a day". Found some pretty good things in it. For the rest, I bought Mary Karlin's book "Wood-Fired Cooking". A lot of great things in that.

I'd recomend "Peter Reinhart's Artisan Breads Every Day" and also consider "All About Braising: The Art of Uncomplicated Cooking" by Molly Stevens. Don't miss out on brasing during the cool down phase..

Another one which is quite good is "The Italian Baker"...

I have a copy of "The Magic of Fire" by William Rubel, which is an interesting book for WFO fans. While the book is oriented to cooking fireplaces (and yes reading it will make you want to build one adjacent to your oven!) it has a number of ideas that would work well with a WFO, including simply having a fire/ash pit for grilling and ash baking adjacent to the oven.

I suspect you can get used copies very cheaply online....OOOPS...I just checked and copies are $200 plus. Probably more than many of you wish to spend! Too bad... I paid about $30 for my copy eight years ago...

If you can find a copy it is great (as the prices indicate!)

"The Bread Builders" by Alan Scott. It talks a lot about building an oven but covers a ton of other topics related to using a wood fired oven.

For bread, I reccomend Amazon.com: Bread: A Baker's Book of Techniques and Recipes…
though it is not specifically about WFOs.

Also do not overlook the free pdf cookbooks in the fornobravo store.
