I totally missed the 250 temp in the post. Your advice is dead on about the "pink curing salt" in this case
Although, the best turkey that I ever had, was a fully cured/smoked. Actually, it was pretty close to the "best ham" that I ever had

, although I will try to start the snake with a satuated of temp of about 250F, and stabilize about 300F. I'm cooking a 16.5lb bird, maybe stuffed it. Wonder how long should I cook it? Dinners is at 1:00 pm, birds needs to rest, when should I start?....................... How will you all cook your bird this turkey day?
