I know that to rush is not good when doing bread, Is there a method to make a dough and be able to bake in the same day?

Re: Bread in one day
Lots of bread recipes only take a few hours. Basically anything calling for regular yeast can be done in a day, and more yeast=faster proof/rise. If you want a dough to be ready to bake sooner, use more yeast. Just keep in mind that what you gain in time you'll lose in flavor and possibly texture depending on what grains are used.
A stand-by, same day yeast bread at my house is the Jason's Ciabatta recipe from The Fresh Loaf website. About three or four hours start to finish.
