    I tried a Naan Recipe wondering if cooking on the hearth at 850f would work like a tandoori cooker and the results were impressive. These are super enriched doughs with yogurt and other oils. They will rise for about 1 1/2 hours and you use a rolling pin to get them flat. I used the peel to slap them on the hearth and cooked 3 -4 at a time.

    Another thing to do that is very impressive while you are working at the high end of the cooking spectrum.

    Does it have besan flour in it ?

        I think parker.larry made the post and credited the author.

        This Naan puffs up and makes a real nice pocket. If you do not want the pocket, I would leave out the baking powder.

        Remember, this on a 850 degree F hearth.
