  • No Yeast Sourdough Bread

Would someone have a recipe for a sourdough bread that is made with no yeast? The Italian Community in Griffith NSW Australia bakes this kind of bread but I can't seem to find a recipe. From what I can gather it is simply flour, salt and water however I do not know quantities, length of time resting and baking times and temperatures. Can anyone help please?

There are tons of books on the subject, but I started out with this thread and worked on from there:

It's important to recognize that yeast is unavoidable. It's in the air around us, on the fruits and vegetables we eat, and, most importantly, in the flour we use to bake bread. Given time, a dough made with just flour and water will rise as a result.
