        Nice oven spring. Great color. Do you use rolled oatmeal or steel-cut in that?

          Rolled. It was 50gr of rolled oats in a 500gr loaf, with an extra 50gr of water. Last night I made dough with 100gr of rolled oats (and 100gr of water, which was too much) in a 500gr batch to see if we like it. We ate half of the first one last night -- and I think the rest will become toast today.

          I have used steel-cut oats, but I think you have to soak them overnight. At least that's what I have done so far. There is so much to learn on whole grain -- I've barely scratched the surface of the new Reinhart book.
