Interesting question. My first thought when I read your post was to attempt to carefully debone the leg creating a pocket that could be filled, then closing up with string and cooking creating a Mini Roast. Or maybe even crumbing to create a Turkey Kiev style of dish.
Fillings could be;
-Garlic and Butter
-Cranberry and Sage - This is fantastic with turkey. My butcher makes sausages with Turkey Cranberry and Sage. Yum Yum
-Seasoned Stuffing to create a Mini roast.
I have not attempted any of these, but your question has certain possibilities.

Thanks for that, I am tempted to put one in a rub and cook it in the WFO, as we are having Spanish Tapas tomorrow that can go in too. Your suggestion could be another option, will let you know.
