  • Rotisserie for the Forno

I have been thinking for some time that a rotisserie for the forno would be a good thing to have. Finally I came across one that was designed for a 4 burner BBQ and made some modifications so it would work in my WFO.

Basically what I did was to fabricate a tray to attach the spit to and enough extension to get the motor out of the heat. The tray is welded aluminium sheet and that was simple enough. The tray just fits in the oven and the bar of the spit extends beyond my old blast door that I modified to be able to remove while using the new toy. I also close the front of this with a brick to regulate the airflow into the oven while cooking.

This is MK 1 and no doubt it will be improved over time. It cost very little since the rotisserie was $17 at the end of year sale at ALDI and the offcut of aluminium sheet cost about $5 from the scrap metal dealer.

I am very happy with the result and the outcome of the first cook last night. Dinner for one x 2. Very tasty and it took an hour to cook (all in at the same time).
    Cheers ......... Steve

Looks great. One thing you might consider would be a wider drip pan and having the ability to change the mount so you could also use a basket or a larger cut of meat. Maybe even a small turkey. At any rate, I am very impressed with your current model. Have fun. Bruce

Thanks Bruce - You are right, the tray could be much larger but that was the size of the sheet I had and I had the need to get the show on the road.

I am not sure what you mean by a basket but with a larger tray it should be ok to cook a larger bird. I don't have a multitude to feed so small chickens are good for me.

How is your oven going, haven't heard much from you lately?

A grill basket is a fairly generic term. I probably should have called it a rotisserie basket. Here is a picture of one.

As for myself, I find myself physically weaker (expected) though still able to get around. Last summer I took a road trip and spent about three weeks exploring Louisiana. My wife and I spent a week in Santa Fe, New Mexico in November. We just returned from Boulder, Colerado after spending a week visiting my brother in law and his family. Next month we will spend two weeks in a resort in Cabos, Mexico staying with my brother and his wife in their timeshare.

I've been working on my bread making skills as well as taking classes in Thai, Mexican, and Cajun cooking. I typically use the oven when we are entertaining. I fired it last night and cooked pizza for some family who are visiting us for a,few days. Right now I have ribs cooking on my grill. When I have time, I'll add some pictures. I have to get some barbecue beans ready for the WFO. Bruce

The grill basket is an interesting bit of gear. We don't see much of that kind of thing here and BBQ in Australia is more about grilling meat quickly rather than the long slow cooking of marinated meats, rubs and the rest. It is partly to do with high quality meat and seafood being affordable and accessible here in the past I suspect.

That chicken in the grill basket looks good and the whisps of smoke add to the tale.

Good to hear that you are mobile and covering some territory. Cooking is one expedition that will never end, there is always something new and interesting around the corner. I am about to launch into having a crack at cheese making. We will see how that goes.

After my crude attempt at fabricating the tray for under the rotisserie I got to work and built a sheet metal folder so I can do a better job of MKII. That was an adventure as well! Might be a good tool when I go to make a new door for the oven. All the best with the beans. Another point of difference, I don't know anyone who makes their own, cans mostly.
          Cheers ......... Steve

Hi Steve, beans and ribs are almost ready. Among purists in our country, bbq is always low and slow and grilling is higher temp usually directly over the fire I'm doing the ribs at about 200f (about 93 c) for about 5 hours. Hope they come out well.

We have house guests this week and my wife spent the day taking them to the coast. I made a muffuletta on my ciabatta bread. They came back and raved about the sandwich.

I thought I had already posted a reply about the tray but now can't find it. I was wondering if you had considered a removable tray. Seems like it would make clean up easier. Also, the nice thing about using a rotisserie basket for chicken pieces is that the drippings baste the other pieces while they rotate. Have fun.

Bruce - It does come apart for easy cleaning. the motor slides upwards and the bar just pulls out of the motor. The other end of the bar turns on an open mount and that just comes away.
