    Re: ***Tonight's Dinner Dirty Steak***

    hey Mark -
    how long per side?

I have some 1.5" thick strips in the freezer..
I do these guys direct the grill (weber performer) for 3-4mins a side, and they come out medium well.

    I'm guessing about 90 seconds a side with about a 5mins rest?
(almost the same as a good pizza )

When you turn them, do you put it on a fresh set of coals? or back on the same spot?

    Mitch.

So, is it just a matter of placing the (thick) steak directly on the coals??

Is there any cleaning involved afterwards to remove ash?

I usually pull the coals to the front, (like RT said) I give them a few knocks to knock the major ash off, Then just drop it on.... I also try to use any kind of fruitwood I may have, Currently my neighbors cherry tree I cut down for her,, seems to taste better then oak or maple......

Is there any cleaning involved afterwards to remove ash?
every once in a while a hot coal will stick,,, I just knock it off,, But after I just let it sit a few minutes, slice and serve.. Never had to wipe or clean anything off... Its kinda strange but its true

        how long per side?
it usually takes 2-3 mins per side for a 2 inch london broil.. I go by firmness.. I prefer it pink inside as long as its warm...

This weekend I have dirty pork chops planned,,, should be good

        Cheers

Ha - I've heard of "smells" being transmitted electronically (or probably recreated on the receiving end)... so it won't be long now till we get the full package!!!!!
