  • Filet Mignon...Wow..Truly Amazing!

    Who would thought that filet mignons could be cooked to such perfection in a brick oven? About a week ago, I purchased a cast iron grill and quickly went on my merry way cooking with it. Its really important to get the wood coals glowing nicely without flames prior to cooking. My filet mignons were resting for about an hour and just waiting for the grill to heat up. The grill took about five minutes to be ready and I was off and running. I choose to flip the filets every minute and half for approximately 4-5 minutes. P.S. Sounds like a sin to keep them on that long. I also cooked the sides for about 30 seconds to give an even cooking approach. My family raved all night long. So I can truly say that I am excited cooking in my brick oven during the hot summers of the Northeast. Wish everybody well with the whole experimentation thing. Take care.

    Hi Zeke,

    How high off of the oven floor is the grill? I am planning on making my own tuscan grill for doing some nice steaks like you described.

    Any pictures?

      I purchased one of those 12"x12" approximate square 8" from the floor cast iron grills from Amazon. The purchase price was about $40 but well worth it. I admire your gusto in making one yourself. Good for you! As I write this I just improvised and made my own baquette pans out off a drain pipe. I know i am crazy but they did come out looking pretty awesome. I plan on using the proofing pans tomorrow to hopefully make some incredible french banquettes. My wife took a picture of the filets and I promise to post them once I download them from her low tech phone. Oh, another thing, I've been grilling all kinds of things with unbelievable success: eggplant, zuchinni and pork spareribs. Love the high temperature cooking.         You are right about the grill - the food is off the chart. I cooked these some time back. They were only rib eye's but good is good

        I built my grill as well but if I had it to do over, I would have bought one. After I bought the metal and carbide tool to cut it, not to mention the time, it wasn't worth it. It also rusts very easy. It was a fun project though.
