Recipe was found in CRUST by Richard Bertinet. I also have a few of Peter Reinhart's books artisan breads every day and The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread.
I have had my mother starter going for about 6 months now. I made it following Peter Reinharts book. My starter is incorporated once a week in my bread using the WFO with good results... I'm always striving to make it better as this appears to be a life long journey.
P.S. Making croissants for Thanksgiving!
