I started making potato bead about a year ago and my wife requests it every week .. so I have made it about 50 times now . tweaking the recipe a bit , mostly trying to use the least amount of flour to keep the dough as moist as possible
Cook 1 1/2 lbs potatoes in 5 cups water
drain water into stock pot add 1 cup rolled oats cool till lukewarm
add 2 1/2 tbs dry yeast .. proof till foamy
mash potatoes with 1 cup milk , 2 tbs butter 3 tsp salt [sea salt]
add potatoes to stock pot stir well
add flour 1 cup at a time
2 1/ 2 cups Whole Wheat hard , up to 10 cups unbleached hard flour
I use stone ground organic .
Stir till incorporated should be sticky
cover let rise till double , 1 1/2 hrs
Loosen up edges and pour out onto a board with lots of flour
cut into chunks and roll in flour [ so you can pick them up ]
Put onto greased and floured pans / sheets let rise 45 mins. 450f oven works for me but I have done hotter and cooler .
bake till brown the loaves come out of the pans and back in the oven to brown the side and bottom
for me it works out to 25 mins buns , 25 + 10 mins browning for loaves
internal temp 205 f
makes 3 loaves +16 buns
