Saturday night was pizza night.
Sunday morning, a leisurely bread bake (I baked some scones).
But what to do for dinner on a busy Monday night? There is still retained heat in there, so use it! On Monday mornings, my oven is a balmy 280 degrees. Perfect "Crock Pot" slow-cook temperature.
Use a dutch oven, or any oven-safe covered pot/dish
...and here's the best part:
onions, peppers, mushrooms; whatever you have. Throw them all in.
Pop it into the oven after you send the kids off to school and forget about it until time for the evening meal (7 hours or so).

- 3 to 5 pound beef chuck roast
- 1 bottle of beer (you saved a bottle from Saturday night, right??)
- 2 envelopes onion soup mix
- garlic powder to taste
- pepper to taste
- NO salt (the soup is loaded with it)
- 2 or 3 tablespoons Worcestershire sauce
- small bag of baby potatoes
- handful of baby carrots
...and here's the best part:
