  • Peruvian Rotisserie Chicken

    Working on my second oven.This one is a bit bigger than my first one,using this design.I only have dome and hearth in.Walls going up soon.but today I used it to cook a chicken on a rotisserie...Man was it good...Having a party next week and I have to cook ten of these birds....

    That looks really good. Does it have stuffing? Marinade? How long do you roast it?

    I think I could do a rotisserie with a couple of bricks with holes in them... I have the motor and the skewer we've never used from the gas grill.

      Basically I make a wet rub,depending on how many I'm cooking.Some ground cumin.paprika,garlic powder,dash of white wine,and some oil.Marinate for a few hours.cooking time varies,this one took about 2 hours,just slow roasting.I brush some more of the marinate during the last half hour.No stuffing.
