Chicken tenderloins with Walnuts and Chanterelles

  • Chicken tenderloins with Walnuts and Chanterelles

    Place in large iron skillet
    4 frozen chicken tenderloins
    1/2 tsp of crushed garlic
    1/2 onion sliced very thin and coarsely chopped
    8oz fresh Chanterelles
    pour in enough chicken stock to almost cover the tenderloins
    place in 800 degree oven
    cook until tenderloins are 1/2 cooked (about 4-5minutes)
    remove from oven
    turn tenderloins over
    add 1/2cup chopped walnuts
    add1/4 chopped purple basil
    add 1Tbsp of hard butter
    add 2 tsp of flour
    return to oven until liquid thickens and chicken finishes cooking through
    add more stock if necessary to keep a nice sauce
    Last minute sprinkle parmesan lightly on each tenderloin to brown slightly

    And Voila!
    pair with a nice young dolcetto

      Nice recipe!

      I have chantrelles on my property and hope to have them fruit soon! I may give that a try! Thanks for sharing!
