We are having a party this week which has grown to 40 people. i can handle the dough and toppings Okay but i am concerned about keeping the oven floor hot enough. i would appreciate any assistance or guidance.
I could not locate much relevant on forum and any direction would help.
    Thanks for your time.

    Hi Bob,

Take a look at the latest blog posting from a mobile caterer who contributes to our blog about how she manages her fire to keep the oven floor hot: https://www.fornobravo.com/blog/a-gi...-shes-on-fire/

There is a really good chapter on this in the book The Art of Wood Fired Cooking - which just happens to be available online from google books. Read that for sure!

Thank you so much, the Girl and her Dragon certainly has the floor heat sorted out. Moving the fire to the other side will not be difficult or time consuming.
i will check out the Art of WFCooking asap as well.
        Thanks for your time.
