Hi Gocat, Welcome to the forum.
I have used the disposable aluminum trays for low and slow cooks ( 250°F) and under. I rarely use them or even aluminum foil covers inside the oven anymore. With over a dozen years of WFO cooking, my purchases + gifts from family, I have amassed an arsenal of cookware. In that arsenal is many different types of cast iron cookware. But, my go to for ease of use (lightweight and easy to clean) is graniteware. Graniteware is an old brand name but, it and many of the other similar enamel coated cookware brands are very affordably priced if you shop around.Joe Watson " A year from now, you will wish that you had started today" My Build Album / My Build

G’day
Those little pottery feet used to lift plant pots of the ground are a useful addition to your slow cooking tools. You can use it as a trivit to lift your cookware off the brick base and prevent the food from overcooking on the bottom before the tops properly cooked.
