  • What trays to use for wood oven

Hi we've only used our oven for pizzas but now we'd like to try other things but don't know what trays to use thinking about cooking slow cooked Meats. can you use heavy duty aluminium disposable trays? thanks

Hi Gocat, Welcome to the forum.

I have used the disposable aluminum trays for low and slow cooks ( 250°F) and under. I rarely use them or even aluminum foil covers inside the oven anymore. With over a dozen years of WFO cooking, my purchases + gifts from family, I have amassed an arsenal of cookware. In that arsenal is many different types of cast iron cookware. But, my go to for ease of use (lightweight and easy to clean) is graniteware. Graniteware is an old brand name but, it and many of the other similar enamel coated cookware brands are very affordably priced if you shop around.

      G’day
Those little pottery feet used to lift plant pots of the ground are a useful addition to your slow cooking tools. You can use it as a trivit to lift your cookware off the brick base and prevent the food from overcooking on the bottom before the tops properly cooked.
