For my pizzeria I builded a high volt 46" pompeii oven in my kitchen. For heat concerns I made the opening width 20" and the height 13". Probably this would work fine if the oven was outdoors but in my case, its a quiet a hassle getting a decent fire all night. By the smoke production I imagine the problem is a lack of air circulating.
We are thinking of building a 4" tube inside the center of the dome with an elbow up going up untill the end of the chimney (3,2 mtrs) outside.
This is what my welding guy recomended, any thoughts on this ?
