In previous posts, I mentioned that I was having a hard time finding an air temp gauge that went higher than 600 F. Sometimes, the duh factor really does work. Almost every day, I pass by a shop that sells BBQs, smokers, wood stoves, gas stoves, etc. They also do installations. Duh. I stopped in on the way somewhere else and hardly got my question out before I was shown a selection of flue-gas stove therms. For $15, I got one that reads air temps to 1700 F made by Imperial (imperialgroup.ca). All I have to do now is drill a hole in a firebrick to make an in-oven stand for it.
