I'm looking at a Fast Casual pizza restaurant but am concerned about keeping up with peak volume. Assuming efficient but not superhuman workers, how many 12" Neapolitan pies can 2 wood burning ovens put out in an hour? They have a 3 pizza capacity and bake at 850 degrees for 90 seconds.
