Has anybody ever heard of a commercial brick pizza oven without any insulation? I spoke to a guy importing commercial pizza ovens from Italy here to the Czech Republic. He claims that his bricks ovens are made of volcanic clay and are not covered by any insulation layer. It's supposed to be an old traditional way. There is only some finishing made of mortal. He says, the temperature of the dome of the working oven is about 3ºC (37.4ºF) higher then the room temperature.
Has anybody any experience with these ovens? Do you think this is possible? See some pictures enclosed.
