  • Commercial Pizza Oven Conversion

    I was looking to get some information on how to convert pizza ovens from coal fired to wood/combo. I have two Earth Stone pizza ovens that are configured for coal. They have a small grate in the corner, which I assume is to collect the ash. My question is, can wood be burned in here without taking out this grate and replacing with a new floor stone? Also, does anyone have any experience/expertise in this or reccommend anyone who does that I may hire to consult and/or do the work?
