Finish for trailer mounted Modular Oven?

Hello,

I have been looking around for a few hours trying to find answers to this but no luck, maybe I just overlooked it.. I have purchased a new 120 modular oven, just got it today!!. My intention is to mount it on a custom trailer that I am having made for catering. I have a very good grasp on the entire construction except one thing. What would be the best way of finishing the dome? I will be securing the oven using metal strapping to the base then installing 3" of ceramic insulation on the entire dome, just not sure what would be the most crack resistant finish to do on top of that. Any help would be appreciated!!

Something light. Like an aluminum sheet enclosure. No masonry to develop cracks that way, and you'll probably have an easier time getting i past health code if you use an approved material to cover it.
