I have a commercial oven, and the issue is the chimney, is not working, the smoke keeps coming out of the oven entrance any idea?

It looks like a corrugated SS chimney liner too. Get rid of that and use a triple wall chimney or box in a traditional clay flue. I realize you are in Mexico and all, but what you have there is a fire hazard.Old World Stone & Garden

BTW, are you burning gas and wood in this oven? I was curious about the size of the throat in the vent...that might be hurting your draw too.Old World Stone & Garden
