  • White Oven Complete

    Finished the build of our "White Oven" and tested it.

    Easily achieved 550F in the upper oven and cooked pizza's without burning.

    The Pizza Oven was built to look original to some 120 year old ruins that a client was using in his landscaping.

    The lower firebox has firebrick lined flues that envelope the upper oven and also heat a cast refractory smoke shelf that divides the two boxes.

          It is lower than originally planned. The landscapers brought the interlocking brick base one step - 6" higher than the original plan but the oven was already 70% complete.

          We ended up 32" to the floor of the bake oven which works fine but the firebox would have been nicer a little higher. Oh, well that's what happens when plans change half way through a build!

            The doors really make it....were they custom made? Also, did you use a bagged refractory mix or your own design for the slab?

              Yes, the doors were made at a foundry in Merrickville. They had the form for woodstove doors and adapted it for the bake oven. Really nicely done, but old door off of an antique cook stone or woodstove could work as well.

              I bought pre bagged castable refractory for the divider. Great stuff to work with and it will stand u to the extreme heat well.

                Beautiful brick and stone work, and I'm happy the customer is pleased, but it sure seems like a lot of work and expense for an oven that cannot perform on par with the cheapest economy kitchen stove. This guy must have a real issue with smoke, lol.

                  If the customer is happy, no rationale is needed. It makes more sense to build what is wanted by the customer rather than what the contractor thinks should be built, even if the contractor is right.

                  I draw the line at shoddy work, but if someone is dead set on building a Rube Goldberg, that is their problem, not mine.

                    Yeah, plus setting a Hotpoint stove into the stonework would look pretty stupid.
