read it, and would really like to see it. I am hooked on the older
ovens. Did you see my photos of the 17th century ovens in France.
They look almost exactly like the ovens uncovered in Pompeii. They

I think it is cool that the modern Italian oven -- prefabricated or
brick, looks and cooks almost exactly the same as a Roman oven built
2,000 years ago. Nothing new under sun -- except the Internet.
One difference was that their ovens were all commercial -- so we are
lucky to have ovens in our back yard.
