 Pull up the floor tile and re-level it with a dry fireclay/sand mix. Forget about some kind of magical self-leveling product you can apply to the surface...nothing like that will work.Old World Stone & Garden

 Then get yourself some standard firebrick to fill in the gaps at the edges and or cut down the one that needs cutting. At the edges no one will notice or care.  A little update, removed the bricks today. Sunglasses are for size comparison! The brick on the right isnt broken, well a piece of it is, but it was cut to go around the gas burner in the oven. The bricks are about 1-7/16" thick now.
 
 I am going to get some 9x4.5x1.25" firebrick splits tomorrow and replace them. Charlie, the person that manufactured the oven told me to use thin set to replace the bricks. Can I just use fireclay sand mix dry instead?

 No to thin-set, bond will fail during the very first fire...sand fireclay mix is good.Old World Stone & Garden
