Re: Gluten Free Pizza Dough... i need help!
My first and only attempt at gluten free pizza I used a GF bread premix. It worked out ok and my sister (who is totally intolerant of gluten - and fools) enjoyed it.
There are recipes online and some of them could only end up biscuit like with the ingredients in them. The premix I used had rice flour, corn flour and spelt I think it was plus xanthen and guar gum to replace the gluten.
There was an interesting article about this recently that ventured the thought that slow rise/fully developed dough has less undeveloped gluten remaining and thus a lesser impact on those less able to tolerate gluten.
Here is a source for GF recipes, I have not tried any of these but it is a starting place if you want to make GF dough from scratch. Gluten Free
Hope this is of some help. If I can find the article I mentioned I will post the link for you.Cheers ......... Steve

I would try and get them to try sourdough first.
Most people have a reaction to the fructose in flour the sourdough process reduces this and people who thought they where gluten intolerant actually werent.
If it doesnt work
Sourdough Gluten free is the next best option
