A question about mortar and cement

Hey all. Total newbie here.
I was wondering if its okay to mix mortar and cement less than one bag at a time? I'm trying to do the dry stacking method that they talk about in the Forno Bravo book, but I do need to even it out a little bit. I don't think this will take a full bag of the mortar mix they recommend. Can I mix less than one bag at the same ratio? I can't think of a reason why I couldn't, but I wanted to check.

You can mix mortar or concrete in any quantity you like. You certainly don't have to use a full bag, just add water until you achieve the desired consistency. Is that your question?
Are you talking about dry stacking cinder blocks to make your stand? If so, you should be using concrete not mortar.
