In virtually every photograph of ovens, there is no "ash slot" like the barrel oven designs...any reason? Does anyone have a preference? Is sure looks like it would make life easier....

I think you can but it just adds another level of "complexity" to the job.
One question is where do the ashes safely go? Must are planning on putting wood underneath the hearth so you need a way to separate.
I've only built 4 fires and it hasn't been that hard to remove the ashes with a small shovel.
