i am building an alan scott oven and was wondering if i should use the fireclay mortar mix (10 - 3 - 1-1/2) or just type s mortar for building the chimney. any ideas on which would be the better choice?

I'd stick with the fireclay mix as the Portland cannot withstand the higher temperatures.
I know that it's a chimney that you are referring to, but they still get pretty hot.
Go the safe way rather than inviting problems to your build.
