i would like to know if installing a 3' x 3' x 14 gauge thick stainless steel cooking surface on top of the fire brick would be unwise or no harm done. using fire brick and mortar to cinch it down. my feeling is that it would be much easier to clean, perhaps more versatile for other cooking needs beyond pizza. what is your thought on that?
one other idea that i have is installing a temp probe within the mortar to check brick temp, and one for the hearth to check cooking area temp. i've had a very hard time trying to find probes and gauges that would meet my needs. any thought on this?
i have no background what so ever in construction let alone building an outdoor pizza oven, so don't hold that against me
