Outside kitchen install inside block/stone structure - what do I need for the chimney

I'm about to start my project, ordering a Giardino 70 that will be installed into an outdoor island. The plan is to build a structure around the oven, wood storage below.
My question is do I need to order something extra for the chimney or can the structure itself serve that purpose?
