Hello all! I've been doing a lot of reading around here, now it's time for some questions on installing my 1st pizza oven. Let me start w/this one;
I've acquired a 2 pc dome oven; 1 piece hearth & 1 pc dome... inside dims: 28" dia x 12.5" H. The dome sits on top of the hearth. In the reading I've done, seems that the dome is typically not sealed to the hearth. The instructs for this particular oven call for the dome to be shimmed up 1/4" and refractory mortar be used to seal this gap. It makes sense to me... except that everything else I've read calls for not doing this. I feel almost foolish questioning the manufacturer but can anyone shed some light my direction? I will also be using ceramic blanket to cover the dome... seems that sealing everything would also prevent any of this fiber from working its way inside the oven.
