  • Insulating steel Nonno peppe pizza oven

    Hi - I can’t seem to get my steel pizza oven up to 500 for particularly long periods. Whilst it has insulation in the cavity of the steel dome, the hearth is basically a couple of large terracotta slabs on steel, and a steel back. I was thinking of putting fibreboard under the pizza oven and attaching fibre blanket insulation to the back. Do you think this will help with retaining heat ?

    You are losing heat due to a couple factors, no insulation under the tiles and the tiles sitting on a highly conductive material. How thick are the tiles? Anything less than 2" does not give you much thermal mass to hold heat either.
