Sounds great. Do you just pull the red coals under a grate with chicken on it or do you put them in a shallow roasting pan ?

We use two big cast iron skillets. I usually dump all the chicken renderings onto the outdoor fireplace.
Anywhere from 350 to 650 on the dome temp
