I have become interested in building one of these ovens and I was going to purchase the prefabricated primavera 60 but would much rather have one built by my hands. I have masonry experience and a question I had is what is holding the bricks from not falling down while laying on an angle while builing the dome. I have beeb looking at the instructions and seem to be confused. After the blocks are layed and cenent is poured for the roof it gets a little tricky so it seems.

The mortar that you select and use hold the bricks in place, just like in your house which are stacked vertically.
The home brew or poor man's mortar has fireclay in it and this additive makes the mortar stickier and hold the bricks in place all but the last couple of rows where they are almost vertical.
